Vietnamese Chicken Sandwiches

rotisserie chicken, skin removed and shredded
large carrot, julienned
red pepper, halved and thinly sliced
cucumber, halved, seeded and thinly sliced
mandarin ginger vinaigrette
romaine salad blend, roughly chopped
8-inch (20 cm) soft bread rolls
fresh coriander washed and dried
1/6 of the recipe
Combine chicken, carrot, red pepper and cucumber. Toss with vinaigrette and salt and pepper to taste.
Divide lettuce and chicken mixture between each roll. Garnish with coriander, if using.
