Directions

  1. Divide the salad greens onto 4 plates.

  2. Arrange the melon, prosciutto and blackberries on top of the greens. Sprinkle with pistachios, cheese and mint leaves, if using.

  3. In small bowl, combine oil, vinegar, honey, salt and pepper. Drizzle onto salads just before serving.
