Maple Leaf Ice Cream Cookies
Separate cookies by gently twisting them apart. Scoop 1 tbsp (15 mL) ice cream on top of 8 halves, spreading ice cream evenly. Cap with remaining cookie halves. Roll ice cream exposed on sides in chopped pistachios.
To avoid melting, freeze each cookie sandwich as it is completed. Leave batch in freezer 1 hr. to firm up.
