Herbed Pork with Brie & Apples

Directions

  1. Mix together salt, paprika and pepper. Slice pork into 8 equal pieces. Flatten any thicker pieces by gently pressing them with your palm. Season both sides of pork with paprika mixture.

  2. Heat honey Dijon dressing and oil in a large non-stick skillet over medium heat. Add pork and cook until golden, about 2 min. per side. Add apple juice, apple wedges, garlic and thyme, then stir. Cover tightly and simmer gently, turning pork once, until pork is cooked through, about 3 min. per side.

  3. Place brie overtop pork and divide among 4 plates. For a thicker sauce, boil liquid in skillet for 30 to 60 sec. and then spoon over pork and apples. Serve with fresh asparagus and orzo, if desired.
