Gnocchi with Leeks, Red Pepper & Feta
In a large skillet, heat oil over medium-high heat. Add leeks, red pepper and season with salt and pepper. Sauté until tender, about 8 min. Pour in broth, stir until heated through, and remove skillet from heat.
Meanwhile, cook gnocchi according to package directions. Combine cooked, drained gnocchi with leek mixture and sprinkle with feta and parsley.
